Job Description
Business Unit / Department Mission: Inspects, wraps, rotates, cuts, tests, and orders meat for new and existing retail customers by performing the following duties.
ESSENTIAL FUNCTIONS AND PROCESS RESPONSIBILITIES
(Other duties may be assigned as necessary)
- Must be familiar with over 100 cuts of meat. Responsible for Market operation in Manager's absence.
- Assists Manager with organization and delegation of duties, including scheduling.
- Cuts meat for full and self-service cases.
- Organizes and delegates the day-to-day operation of the meat market.
- Places and receives meat orders, includes inventory control.
- Monitors work conditions for safety and sanitation.
- Cleans, sanitizes, and organizes the meat cooler, the cutting room, and the wrap station.
- Performs cutting tests on the profitability of retail meat cuts.
- Provides internal customer service. Assists in supervising up to 10 employees in the Market Department.
EXPERIENCE AND EDUCATION PREFERRED
- Typically requires 5-8 years of related experience.
- Knowledge of department product, food preparation, and equipment required.
- Supervisory experience preferred.
- 2-3 years exp. in meat cutting, food preparation, and equipment required.
- Food Safety and Sanitation Certification preferred.
PHYSICAL AND OTHER REQUIREMENTS
- Function in a fast-paced, retail environment
- Lift 20 lbs or more on an occasional basis
